Oleo nuovo- freshly harvested, milled and filtered extra virgin olive oil. Light emerald color with a delicious and healthy punch due to its freshness and high phenolic acid content. A delight as a finishing oil or healthy tonic. The color will gradually fade in 3-4 months with careful handling. Some chefs advocate freezing small portions to extend the vibrancy.
