Description

This Tuscan varietal wins silver medal each time it is entered into competitions. It places second, only to our Pendolino, in the robust category. However, it is our family favorite, nicely balanced between green peppery notes and a more buttery base. Enjoy as a finishing oil or to enhance sald dressings and marinades. Delivered in charming 500 mL Tin.

Al Pie del Cielo

We are a microproducer of Extra Virgin Olive Oil at our farm Al Pie del Cielo. Our 350 olive trees were the sole survivors of a 50 acre grove which had been destroyed by a freeze in 2012, just before we acquired the property. We used Yeoman plows to improve water sequestration and improved organic fertililizing. Our population of quail seemed to increase and delight us with their presence, hence our product's name, Codorniz, quail in Spanish. We produce three Tuscan varietals: Pendolino, Coratina and Frantoio. Pendolino is a pollenator, but we love this low yield oil, which we harvest early to capture its peppery notes. Like our Pendolino, Coratino is very high in phenolic acids, anti-oxidants, which afford the oil's helth benefits and enhance their own conservation. These are ideal finishing oils. Frantoio has more fruity notes that pair well with cheeses and sandwiches. We also use it for cooking.
