Why a whole bird you might ask? Offering them this way makes a small operation like ours viable. For everyone's food safety small operations like ours aren't allowed to break down the meat farther, to offer that we would have to truck our chickens hours away to a certified buthercing facility. Our goal is keeping the entire process as close to home as possible.
Other benefits of the whole bird? You can make a delicious meal with leftovers, then the unused portions, like the back, can be used to make a stock or bone broth!

To safely thaw a whole frozen chicken, place it in the refrigerator allowing roughly 24 hours per 4 to 5 pounds of meat, or submerge it in a cold water bath changing the water every 30 minutes for a faster 2 to 3 hour thaw. Once thawed, roast the bird at 375°F to 425°F until the internal temperature hits 165°F
Chickens come frozen, and weigh between 6-7 Lbs.
