Cal Poly Chocolates was started in 2000 by now retired Food Science and Nutrition Faculty member Dr. Tom Neuhaus. Cal Poly Chocolates uses a 36 % milk chocolate, suitable for many applications. Made with sustainable Cacao-Trace chocolate liquor. Real chocolate made from sustainably sourced cocoa beans, Non-GMO. The finest cocoa beans are carefully selected to make pure Chocolanté chocolate, and its undeniable, wonderful taste. For our dark we are using Belcolade "The Real Belgian Chocolate" Noir Supreme 70.5% Dark Couverture Chocolate. Student employees learn about the science and art of chocolate making and some of the tools and equipment used to make all things chocolate.

Bread Bike is an organic bakery with a focus on whole grains and seasonal ingredients. We make our bread using a natural leaven (sourdough) that we made ourselves many years ago. Our loaves go through a long, slow fermentation overnight at low temperatures. This process yields a well-fermented loaf that is much easier to digest and more nutritious. Our California-style pastries are made with a focus on seasonal fruit grown locally. We try to find balance in our creations so they are wholesome, comforting, and sustaining. We strive to source the highest quality ingredients that are grown locally and responsibly. Both our whole grain wheat and bread flour is grown here in California. We source whole grain kernels to mill fresh every week in our stone mill from small scale organic farmers around California. We supplement our whole grain sourcing with milled flour and seeds from Community Grains and Central Milling. Hi friends, Paula here. I'm a local sourdough in-home baker. We only do traditional small batch sourdough. I started my sourdough adventure after going gluten-free and wanting bread that didn't taste like cardboard. I started researching the slow-fermenting natural yeast and the benefits of eating it instead of what you find in the stores. Sourdough is a live fermented culture, "the starter," which acts as a natural leavening agent. The starter is what gives it that incredible texture and flavor. So much science! I use no commercial yeast, no preservatives, or additives. It makes the bread and goodies easier to digest and process even for gluten sensitive people. I take pride in my products and love the fact that I can share in the community my joy and love of baking bread and all the things sourdough.
