Tomato, Basil, Mozzarella bagel

Think of these like an elevated pizza bagel, but, like, enfancypantsed. Instead of lowly sauce and mozzarella, we bake a thick slice of heirloom tomato on top of fresh basil until the tomato gets all jammy. It's got a nice crust of real-deal parmesan cheese on it, too.
